Monocalcium phosphate is an inorganic compound with the chemical formula Ca(H2PO4)2 ("ACMP" or "CMP-A" for anhydrous monocalcium phosphate). It is commonly found as the monohydrate (""MCP" or "MCP-M"), Ca(H2PO4)2·H2O (CAS# 10031-30-8). Both salts are colourless solids. They are used mainly as superphosphate fertilizers and are also popular leavening agents .
Monocalcium phosphate food grade can be used as the food ingredients, it is widely used as emulsifier and stabilizer in food processingit and it is also used as bulking agent for pastry and cake,bread improver or buffer , humectants for meat,curing agent for pectin; yeast, nutrition enhancer , chelant etc. For brewing, it can enhance diastatic activity, ferment capacity.
Usage: Used for fertilizers, glass manufacturing, plastic stability, livestock auxiliary feed, food additives
It is used in products such as pancakes, biscuits, and angel food cake mixtures, which require rapid gas production and minimal working hours. When rapid fermentation is required due to the short baking time, it is also used for biscuits and muffins.
MCP is a double acting fermentation acid. After releasing two-thirds of carbon dioxide during the mixing process, MCP is converted into dicalcium phosphate, which is latent at room temperature but releases carbon dioxide when heated in an oven. Some brands of fermentation powder contain MCP as the only fermentation acid.
